Espresso 濃縮咖啡

Espresso (/ɛˈsprɛsoʊ/, Italian: [esˈprɛsso]), sometimes spelled expresso, is coffee brewed by forcing a small amount of nearly boiling water under pressure through finely ground coffee beans.
Espresso is generally thicker than coffee brewed by other methods, has a higher concentration of suspended and dissolved solids, and has crema on top (a foam with a creamy consistency).As a result of the pressurized brewing process, the flavors and chemicals in a typical cup of espresso are very concentrated.
Espresso is also the base for other drinks such as a caffè latte, cappuccino or caffè Americano. Espresso has more caffeine per unit volume than most coffee beverages, but because the usual serving size is much smaller, the total caffeine content is less than a mug of standard brewed coffee, contrary to a common belief.

濃縮咖啡(/ɛ'sprɛsoʊ/,義大利語:[es'prɛsso]),有時被拼為"expresso",是使用經過精細研磨的咖啡豆,9個大氣壓力之下,使用90~95度C的熱水少量萃取而成。
濃縮咖啡通常比其它咖啡的萃取方法厚實,具有懸浮和溶解的固體的濃度較高,並具有Crema在上面(具有乳脂狀稠度的泡沫)。由於使用加壓萃取的工藝方式,結果令到濃縮咖啡中的香氣和風味都非常集中。
濃縮咖啡也是其他飲品的基底,如拿鐵咖啡,卡布奇諾或美式咖啡。濃縮咖啡的每單位體積比大多數咖啡飲料有著更多的咖啡因,但由於通常的份量大小要小得多,因此總咖啡因含量低於一杯使用標準方式萃取的咖啡,這和一般人對濃縮咖啡的印象是不同的。
如果您到旅沐來,建議您嚐嚐濃縮咖啡!!我們會給您兩杯不同萃取濃度的濃縮咖啡,一杯是正常的(約為22~28ml),另一杯為短萃(Ristritto,只取頭段約15~18ml,濃度更高、口感更集中)

Manual pour-over drip brewing is the cheapest, easiest ways to make great coffee. All you need is a pack of good quality filters, a filtercone holder and a way to heat water.With a manual brewing method, you can control the 3T's factors(Temperature,Time,Turbulence) unlike most auto-drip machines, and that the grounds are thoroughly saturated .
You can choose a device that can show up the flavor of the single origin coffee you have.  All you got to do is adjust your 3T's factors to render a cup that is suitable to your taste.

手沖咖啡是最容易,且器材價格取得最低廉的一種咖啡萃取方式。你只需要一個濾器、濾紙、以及任何一種把水加熱的方式。不同於電動美式咖啡壺,使用手沖法,你可以自己控制3T's:沖煮的水溫(Temperature)、萃取時間(Time)、繞圈攪拌次數(Turbulence),使得達成我們想要的咖啡萃取結果。
你可以選擇一個可以更能表達你手上的單一產區咖啡味道的濾杯。所有你要做的,就是思考如何調整3T's,做出最適合你的味道。

The process of roasting coffee needs to control the temperature, the amount of air exhausted and the appropriate baking time, and master the chemical reactions that can add flavor, such as the Maillard reaction, the caramelization reaction, etc., and express the flavor that the coffee beans are most suitable for tasting.

烘焙咖啡的過程需要控制好溫度、排風量與適當的烘焙時間,掌握好能添增風味的化學反應如梅納反應、焦糖化反應等,將咖啡豆最適合品嘗的風味表現出來。
